Carrot Cucumber Relish

  • Coarsely grind to the following amounts of each cucumbers (3 1/2 cups), carrots (1 1/2 cups) and onions (1 cup).
  • Combine them and add salt.
  • Let stand 3 hours; drain.
  • Combine sugar, vinegar celery seed and mustard seed.
  • Bring to a boil.
  • Add vegetables to the above.
  • Simmer uncovered for 20 minutes.
  • Seal at once in hot sterilized jars.
  • Makes 2 1/2 pints.
  • Chill before serving.

  1. This is the sweet pickle relish that I grew up on. We used it on everything from burgers and hot dogs to adding it to meatloaf and tuna salad. 100 times better than anything you can buy in the store! I usually core the cucumbers with a spoon before grinding them up, just my preference as I don't like the appearance\texture of the seeds. Also, I add a bit of turmeric (1 tsp?) for color. Thanks for posting this!
     
  2. I tried 3 new cucumber relish recipes this summer and this one was my favorite. Tastes good and smells wonderful when you open the jar, very fresh!! East to make (I used a food processor) and a very good recipe, thanks BB!!

Sometimes I use a recipe and sometimes...not so much. I have a great collection of cookbooks, and I love reading them and studying the pictures. Sometimes I even cook the recipes, LOL! And that is why I love Zaar, an unending source of recipes and pictures.
