- 473.18 ml hot cooked rice
- 311.84 g can mandarin orange segments
- 226.79 g canned crushed pineapple
- 118.29 ml red pepper, chopped
- 118.29 ml slivered almonds, toasted
- 118.29 ml unsweetened coconut, grated,toasted
- 118.29 ml green onion, sliced
- 29.58 ml mango chutney
- 1.23 ml ground ginger
directions
- Combine rice, mandarin oranges, pineapple, red pepper, almonds, coconut, green onions, chutney and ginger in large skillet over medium-high heat.
- Stir and cook until ingredients are blended and thoroughly heated.
- Serve with grilled or broiled shrimp.
- *Totoast coconut, spread grated coconut on an ungreased baking sheet and toast at 300 degrees F.
- for 1 minute.

This rice was a huge hit with everyone at a Teacher Appreciation Luncheon and my husband's office party. I measured and chopped all the ingredients ahead of time and placed in baggies. The next day, I used an electric skillet to saute the ingredients in front of the guests and the smell was so appetizing, they could not wait to try it.

I am a wife and a mother. I make quilts and work at a fabric store. I have a mug that says, "I use to cook before I learned how to quilt". :) I also garden and am getting ready to take the Master Gardeners course. My hubby and I like to go for hikes with our dog Tank. My kids are older now and do their own things.
My favorite cookbook is....Mastercook with traded recipes from all over the world. I do love the small cookbook called "Aglow in the Kitchen" which I will post recipes from.
A dream to still fullfill is to go on a cruise and visit the tropics.
I love bright colors, scrappy quilts and masses of flowers and people and sharing recipes.
