Caribbean Chicken With Veggies

"Not sure that this is actually Caribbean chicken, but that's what it was called when I received the recipe. It's very good and fairly healthy. I am adding it so that I don't forget it. I hope that you enjoy."

  • Grate zucchini and squash and set aside.
  • In a small skillet heat olive oil.
  • When oil is hot, add chicken breasts.
  • Saute for about 5 minutes on 1 side.
  • Adding garlic to pan and flip chicken.
  • When chicken is done, remove from heat to a separate plate with garlic.
  • Heat salsa with tomato juice to a simmer.
  • Once salsa mixture begins to simmer, add cumin to taste, turn heat to low.
  • Saute grated vegetables for about 1 minute.
  • Serve chicken on bed of grated vegetables with salsa mixture on top.

  1. Our family thought this was just okay. The shredding of the zucchini was a little time consuming. There was a little too much salsa and tomato juice and the zucchini kind of got lost in the mixture. The chicken was a little bland for our tastes. I think if you just chopped the zucchini, and didn't use quite as much sauce it would be better. I also think if there was a little salt added to the chicken it might add some more flavor. I love the garlic in the recipe. Thank you though. I do really LOVE your Recipe#325585 and your Recipe#230953 Made for Fall PAC 2008
