- 1 zucchini
- 1 yellow squash
- 1 -2 tablespoon olive oil
- 4 chicken breasts
- 1 garlic clove
- 1 (8 ounce) can tomato juice
- 1 (16 ounce) jar salsa
- ground cumin, To Taste
directions
- Grate zucchini and squash and set aside.
- In a small skillet heat olive oil.
- When oil is hot, add chicken breasts.
- Saute for about 5 minutes on 1 side.
- Adding garlic to pan and flip chicken.
- When chicken is done, remove from heat to a separate plate with garlic.
- Heat salsa with tomato juice to a simmer.
- Once salsa mixture begins to simmer, add cumin to taste, turn heat to low.
- Saute grated vegetables for about 1 minute.
- Serve chicken on bed of grated vegetables with salsa mixture on top.

Our family thought this was just okay. The shredding of the zucchini was a little time consuming. There was a little too much salsa and tomato juice and the zucchini kind of got lost in the mixture. The chicken was a little bland for our tastes. I think if you just chopped the zucchini, and didn't use quite as much sauce it would be better. I also think if there was a little salt added to the chicken it might add some more flavor. I love the garlic in the recipe. Thank you though. I've been trying to eat healthier and am always on the lookout for new recipes. I really enjoying trying new vegetarian dishes, somewhat to the dismay of my husband.
