Caramel Pudding Cake

"This is a family favorite. The first time I ever made it, I accidentally used a plastic spoon to stir the sugar mixture, and as it melted, I noticed little white bits of plastic floating in the pan. Needless to say, everyone had a pretty good laugh at me. My advice, then, is to use a wooden spoon or something else that does not melt! You have been warned... =)"

  • Spread sugar in frying pan and stir until caramelized.
  • Add the water and simmer until sugar and water form a caramel sauce.
  • Meanwhile, boil the raisins with the water and the shortening.
  • Mix the first four ingredients together.
  • Add the vanilla to the raisin mixture, and then add this to the flour mixture.
  • Stir together.
  • Put sauce in 9x13 pan and add the batter by spoonfuls over the top.
  • Bake at 350º till warm and bubbly, approximately 30 minutes.
  • Serve with whipped cream or ice cream over the top. Delicious!
