- 453.59 g red beans, dried (soak over night in water)
- 29.58 ml shortening
- 946.0 ml water
- 709.77 ml onions, chopped
- 1 bunch green onion, chopped
- 2 pods garlic, chopped (approx. 20 cloves)
- 236.59 ml green pepper
- 14.79 ml salt
- 4.92 ml cayenne pepper
- 4.92 ml black pepper
- 14.79 ml Worcestershire sauce
- 226.79 g tomato sauce
- 453.59 g can tomatoes
- 1.23 ml oregano
- 1.23 ml thyme
- 453.59 g kielbasa, cut into pieces (I use Ekerich smokey links)
- 473.18 ml rice (cooked according to directions on package)
- 113.39 g bottle hot sauce
directions
- Drain red beans, rinse and in a large soup pot combine the beans, and water. Bring to a boil and cook 45 minutes. Add all vegetables, shortening, tomatoes, and seasonings. Cook 1 hour, covered. Stir occasionally.
- Add sausage and cook 45 minutes, or until the beans are cooked.
- Serve with a few tablespoons of rice on top and (optional) dashes of "Louisania Hot Sauce".
