  • Crush the garlic in a press, remove the rind and rub the product around the sides of a wooden bowl -- leave the remaining garlic in the bowl.
  • Add the anchovy filets and crush them to a paste with the back of a table spoon --
  • Coddle the eggs and and add the yolks
  • Add just enough of the olive oil to make a thick, beige sauce.
  • Crush a lemon and add the juice.
  • Coat the back of the spoon with crushed black pepper.
  • Blend the mixture.
  • In melted butter, add a generous pinch of parsley flakes and a pinch of garlic powder.
  • Cut the bread into cubes.
  • Lightly toast the bread.
  • Cut the bread into cubes.
  • Sauté the cubes of toasted bread
  • Hold the cubes in reserve.
  • Shred and add the Swiss cheese.
  • Chop slices of the romaine, discarding the ends and darker leaf tops and toss with the mixture in the bowl.
  • Add the croutons and serve.
