Butterscotch Snack Cake

This is a very good recipe. I used non-fat milk & only half the butterscotch chips (thought it might be too sweet). It was moist but not soggy. Can't wait to try it with chocolate cake & pudding.

Ingredients Nutrition

  • 1 (3 1/2 ounce) package butterscotch pudding mix, cook-and-serve type
  • 2 cups milk
  • 1 (18 1/4 ounce) package yellow cake mix
  • 1 (11 ounce) package butterscotch chips
  • 12 cup pecans or 12 cup walnuts, chopped


  1. In a large saucepan, combine pudding mix and milk.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Remove from the heat; stir in dry cake mix.
  4. Pour into a greased 13-in. x 9-in. x 2-in. baking pan.
  5. Sprinkle with butterscotch chips and nuts.
  6. Bake at 350 for 35-40 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool on a wire rack.
  8. Yield: 12-16 servings.
