What could be better than a delicious butterscotch cake with a chocolate frosting, and it's easy to make too. Great cake for bake sales, parties, holidays, etc

  1. Combine boiling water and oats; let stand.
  2. Melt butterscotch morsels; set aside.
  3. Combine sugar, brown sugar, and butter; beat well.
  4. Beat in two eggs.
  5. Blend in oat mixture, melted butterscotch.
  6. Sift dry ingredients and gradually blend into wet ingredients.
  7. Stir in raisins and nuts.
  8. Pour into greased and floured 13 X 9 inch pan.
  9. Bake at 350 degrees for 35 to 40 minutes.
  10. Frost with your favorite chocolate icing.

This cake was really good. I omitted the raisins and nuts and baked in a 7x11 pan so had to bake a little longer. Frosted with kittencal's chocolate buttercream frosting as another reviewer had done and it was great.

What a find! I never thought of making a butterscotch cake. I was searching for a way to use up some butterscotch chips and found this treasure of a recipe. I toasted and chopped walnuts and omitted the raisins and topped with Kittencal's chocolate buttercream frosting. Delicious.
