- 946.36 ml Brussels sprouts, cleaned and shaved on Mandoline
- 473.18 ml arugula
- 59.14 ml shaved red onion
- 59.14 ml smoked almonds, chopped
- 2 hard-boiled eggs, seperated and seived
- 59.14 ml chopped pitted dates
- 14.79 ml Dijon mustard
- 236.59 ml olive oil
- 118.29 ml balsamic vinegar
- 1 shallot, diced
- 2.46 ml vanilla extract (pure if available)
- salt and pepper
directions
- Combine Sprouts, arugula and onion and toss lightly to combine.
- Combine mustard, oil, vinegar, shallot, salt, pepper and vanilla and blend until emulsified.
- Toss salad with dressing to taste.
- Garnish saled with Almonds, dates and the seived egg whites and yellow (seperately).
