Broccoli and Cheese Twice Baked Potatoes

This was delicious; however, I made this a bit differently. I topped off the potatoes with the mash and marinara and cheese....was amaaazing.

  1. Heat oven to 425 degrees.
  2. Bake potatoes for 45-60 minutes (or until done).
  3. Cut potatoes in half.
  4. Scoop pulp out.
  5. Leave skin intact.
  6. Make mashed potatoes out of the pulp.
  7. Add margarine, sour cream, salt, pepper, green onions, and 3/4 cheddar cheese and mix well.
  8. Then fold in broccoli.
  9. Stir until incorporated.
  10. Fill potatoes shells with mashed potato mixture and top with remaining cheese and sprinkle paprika on top.
  11. Bake for 20 to 25 minutes or until heated in a oven of 425 degrees.
