Quick and easy, not to mention healthy!
- 1⁄2 lb silken tofu
- 1⁄4 cup orange juice, cold
- 1⁄4 cup frozen unsweetened berries
- 1 banana
- 1⁄8 teaspoon vanilla extract
- Using a blender, add everything to the blender.
- Blend until smooth.
Very tasty. Must admit I only used 4oz of the tofu with all other amounts kept the same. Have only just started using tofu in cooking and as I was measuring out it seemed a little much. I will have to try it with the full amount next time.
