Bow Ties in Poblano Cream Sauce

- 1 tablespoon butter
- 1⁄4 cup chopped finely chopped onion
- 2 poblano chiles, roasted, peeled, seeded and chopped
- 250 g reduced-fat sour cream
- 1 teaspoon salt or 1 teaspoon chicken bouillon granule
- bow tie pasta, cooked and drained according to package directions
directions
- In a medium sauce pan melt the butter. Saute the onion until translucent.
- Add the poblano chilies and cook for two minutes.
- Transfer the mixture to a blender container and add the sour cream and salt/chicken bouillon. Blend until everything is well pureed.
- Mix the pasta with the sauce and serve.

This sauce is good good and I’m sure many would like it. We personally like bolder flavors. I added a squeeze of lime juice, cumin, garlic powder, a dash of hot sauce & cilantro. Just YUM!! It’s not a pretty dish to look at lol. I had an extra roasted poblano & diced it & added the pasta. Stirred in a small amount of mozzarella. That said, I’m glad I found this recipe. We enjoyed it for our lunch.
