Found this recipe in Country Cookings Prize Winning Salads cookbook. This just sounds so darned refreshing.
- 2 cups orange juice
- 1 (6 ounce) package orange gelatin
- 1⁄4 cup sugar
- 1 teaspoon lemon zest, finely chopped
- 2 cups buttermilk
- 2 cups fresh blueberries
- lettuce leaf
- Bring orange juice to boil in a saucepan over medium heat. Remove from heat; add gelatin, sugar and lemon zest. Stir until gelatin is dissolved. Chill until mixture is the consistency of unbeaten egg whites.
- Stir in buttermilk; mix well. Fold in blueberries; pour into an oiled 6-cup mold. Refrigerate until set. Unmold onto lettuce leaves.
