Blackened Salmon With Broccoli

"This was delish! The original recipe called for broccoli rabe but I used regular brocolli when I made this, cooking the broccoli until tender.Recipe source: Health (march 2010)"

  • Over medium heat heat a skillet.
  • Coat both sides of salmon with seasoning and then place in skillet and cook for 3-5 minutes on each side or until done and blackened.
  • In another skillet cook broccoli (see note in description) and water in a skillet, bring to a boil and simmer until tender (5 minutes for rabe or 10 minutes for regular broccoli); drain.
  • Wipe out skillet (used to cook broccoli) and heat oil over medium heat. Stir in shallots and salt and cook for 3-5 minutes or until softened. Stir in broccoli and raisins.
  • Serve broccoli with salmon and lemon wedges.

  1. Excellent dish! I loved all the flavors! I was surprised to see raisins in this but enjoyed the sweetness they gave. Served with toasted orzo. Made for ZWT#9 2013 for Hot Stuff!
     
  2. Made as written and I very much enjoyed this dish! I used McCormick's Cajun seasoning and liked that it did not add heat to the salmon (I do not like spicy foods). I made this with baby broccoli and it cooked up quickly. Made for ZWT9.
     
  3. This was really good. Not sure which I enjoyed the most, the salmon or the broccoli. The salmon came out nice and moist with a touch of heat. The broccoli had the sweetness of the raisins. I sure would not have thought to pair the two together but it seemed to work. Can't beat this for a 6.5 WW meal. Thanks for posting. :)

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
