- 425.24 g can black beans
- 59.14 ml onion, finely chopped
- 78.78 ml whole kernel corn
- 59.14 ml thick & chunky salsa
- 1 garlic clove (pressed)
- 29.58 ml parsley or 29.58 ml cilantro
- 1.23 ml salt
- 0.61 ml black pepper
- 118.29 ml unseasoned breadcrumbs
- 2 egg whites
- 4 hamburger buns
directions
- Rinse black beans and mash.
- Add onion, corn, salsa, garlic, parsley or cilantro, salt and pepper & mix well.
- Add bread crumbs and egg whites, mix well.
- Form into 4 patties.
- Cook over medium heat in a little olive oil for 6-8 minutes.

I really like the flavor of these, but after following the directions exactly they were too moist to make into a patty that would stay together. I then added 1/4 cup corn meal and another 1/4 cup cup of bread crumbs. They were still very moist, but cooked up very nicely. The recipe was very easy and was made with ingrediants I typically have on hand so I will definately be making these again!
