These are great! I made these for my Mother.
- Beat all ingredients with wire whisk or hand beater until well blended. The batter will be thick.
- Pour batter onto hot griddle, by spoonfuls, grease if necessary, spread lightly.
- Cook until edges are dry. Turn, cook until golden brown.
I used Bisquick Heart Smart, fat-free blueberry yogurt and was out of milk so, being in a pinch, I substituted water and crossed my fingers it would work. The pancakes turned out great and we really enjoyed them. I can't wait to try other flavors of yogurt. ETA: I also used Splenda instead of sugar.
