Bircher Muesli

"This is from the Jenny Craig cookbook, "Healthy Living For Life". It is an excellent source of Vitamin C and calcium. If you can prefer, you can substitute finely chopped dried apricots for the currants, and chopped pistachios for the almonds."

  • In a large bowl, mix together the oats, yoghurt, milk, currants, and almonds. Cover and refrigerate overnight.
  • Just before serving, stir in the apple and strawberries, reserving some as a garnish.
  • Serve cold, with extra milk stirred through.

  1. This is good. I liked the strawberries in this. I used all but the milk but did not measure. I did use the currants which I like in muesli, blanched slivered almonds, red delicious apple, fresh strawberries, plus the rest of the ingredients. Made for ZWT7 Switzerland, for my team Food.Commandos

I'm married, I have 2 kids (both boys), and I live in Australia. My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here. I'm passionate about a lot of things, mainly my kids, animals, and cooking. I won't even start on my peeves, we'll be here all night! lol
