- 9.85 ml olive oil
- 236.59 ml onion (chopped)
- 236.59 ml celery
- 4.92 ml garlic (minced)
- 354.88 ml sliced mushrooms
- 473.18 ml canned diced potatoes (1 lg can)
- 14.79 ml basil
- 4.92 ml onion powder
- 4.92 ml garlic powder
- salt
- pepper
- 29.58 ml italian seasoning
- 1419.54 ml chicken broth
- 340.19 g vegetable juice (1 can of v8 juice)
- 709.77 ml water
- 946.36 ml diced tomatoes with juice (2 14.5 oz cans)
- 29.58 ml tomato paste
- 3 (1360.77 g) bag frozen mixed vegetables
directions
- heat oil in stock pot over medium heat. Add onion, celery, garlic and seasonings. cook until onions are translucent.
- Add broth, tomatoes and juice, tomatoe paste, and 3 cups water. Bring to a boil and let simmer for 20 minutes.
- Add vegetables and simmer for at least 30 mins before serving. Add more seasonings to taste.
- The longer it simmers the better. Enjoy !
