ingredients
- 1 cup vegetable oil
- 5 eggs
- 2 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 2 (3 ounce) packages jell-o coconut cream pudding mix
- 2 cups sugar
- 2 cups canned pumpkin
- 1 teaspoon salt
- 2 teaspoons pumpkin pie spice
directions
- Mix all ingredients.
- Pour into 2 greased loaf pans.
- Bake at 325 for 1 hour.

Will tell you right up front that my mom's pumpkin bread recipe is the greatest (Of course I'm biased!), but THIS PUMPKIN BREAD IS RIGHT UP THERE, partially, I suspect, because of the pudding mix! Definitely a keeper, but don't tell my mom (Well, you can't, 'cause she's no longer around, but still . . .)! I have this one in my cookbook for Holiday Gift Ideas!
