Beef 'N Barley Dinner

- 1 1⁄2 lbs ground beef
- 1⁄2 cup chopped green pepper
- 1⁄2 cup chopped onion
- 1 clove garlic, minced
- 2 cups water
- 1 (16 ounce) can whole tomatoes, undrained,cut in pieces
- 1 (6 ounce) can tomato paste
- 1 tablespoon sugar
- 3⁄4 cup pearl barley
directions
- In large skillet, brown ground beef, green pepper, onion and garlic, drain.
- Add remaining ingredients.
- Bring to boil; reduce heat.
- Cover and simmer 50-60 minutes or until barley is tender, stirring occasionally.
- About 6 (1 cup) servings.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store.
