Basic Scones

"This is the perfect recipe to whip together if you have friends coming over for tea. It's very easy to make and lovely served with fresh fruit. There are any number of variations you could try with this recipe, including adding 1/2 cup raisins or a little bit of cinnamon to the dough."

  • Grease a baking sheet and preheat the oven to 425 F or 220 degrees C.
  • In a bowl, mix the flour and salt together.
  • Rub in the butter with your fingertips until no lumps are left and the mixture looks like fine breadcrumbs.
  • Stir in the sugar and baking powder.
  • Add the milk a little at a time, stirring with a wooden spoon, until the mixture begins to stick together.
  • Using one hand, pull the mixture together into a ball and plop onto a floured surface.
  • Knead lightly to form a smooth ball.
  • Place on a plate and let the dough rest in the fridge for 10 minutes.
  • Roll out onto a floured surface until it is about 1/2 inch thick.
  • Use a round cookie cutter or a drinking glass, dipped in flour, to cut the dough into circles 2-1/2 to 3 inches across.
  • When you lift the cutter from the dough, be careful not to twist it!
  • This is important.
  • If you twist, you will twist the gluten in the dough and make it hard for the scones to rise straight up when they are baking.
  • Place the scones on a baking sheet and brush the tops with the beaten egg.
  • Be careful only to brush the top, don't let the wash drip down the sides of the scones.
  • Bake for about 10 minutes until golden and well risen.
  • Remove to a cooling tray.
  • Serve warm with butter or cool, topped with fresh strawberries for a special summer treat.

  1. So easy to make. I was looking for an easy scone recipe to make to have with tea/coffe and this was it. I added a little bit more sugar to make them sweeter. Next time I will add cinnamon.
     
  2. Wonderful--this recipe impressed my British friend, who had been complaining about "American" starbucks scones. We had with clotted cream and jam made from very small strawberries when the scones were hot from the oven.
     
  3. This recipe I found slightly complicated for scones... but they looked great and were a hit with the Danes Im living with. Possibly a bit doughy at the bottom... i.e. not perfect, but close :) Thanks for sharing
     
  4. Yum Yum Yum Yum Yum. That is all my kids could say. I had lost my mums recipe and tried this one. It was so easy to make and 10 mins after coming out of the oven they are all gone. I am going to try variations with sultanas and chop chips. This is one I am definately going to make again. Thanks
     
  5. I made these and put chocolate chips in them and sprinkled sugar on top prior to baking. I also cut them in triangles with a pizza wheel. Don't know if I didn't roll they out thin enough or not, but had to bake for approximately 22 minutes. I thought they were a little salty and will probably back off on the salt next time. Otherwise, they were really good. I will make again.

Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
