  • 1. Preheat oven to 450 F (230 C) and place your cheese grater in the freezer.
  • 2. Combine all dry ingredients in a large mixing bowl.
  • 3. Using a cold cheese grater, grate your butter into the flour and stir to combine. If adding raisins or other dried fruit, now is the best time to add it.
  • 4. Add buttermilk and stir to combine. This activates the baking powder and baking soda, so it's advisable to move quickly to get the fluffiest scones.
  • 5. Knead gently four times and roll out on a well floured work surface to a thickness of 1/2 to 3/4 inch.
  • 6. Cut into rounds, squares or whatever.
  • 7. Make egg wash with egg yolk and water.
  • 8. Bake for approximately 12 minutes, until golden brown.
