Barbecue Sauce for Chicken on the Grill

- 118.29 ml apple cider vinegar
- 177.44 ml oil
- 118.29 ml sugar
- 9.85 ml coarse grain mustard
- 7.39 ml salt
- 177.44 ml chutney, fruity
- 14.79 ml coriander, the whole seeds
- 4.92 ml black pepper
- 1.23 ml ground cloves
- 2.46 ml mixed spice
- 2.46 ml cinnamon
- 2.46 ml turmeric
- 4.92 ml ground ginger
- 4.92 ml ground cumin
- 59.16 ml ketchup
directions
- Starting from the top (or whichever way you like!) put all the ingredients in a blender or processor.
- Blend slowly, then at high speed, until you have a thick, smooth, orangey sauce.
- Taste for seasoning: I do not know what your chutney tastes like, or whether you might want more vinegar in the sauce. It's a personal thing.
- Keeps ages in a bottle in the fridge. Just shake again before use.
- This sauce is what we use when grilling over wood coals and/or charcoal.
- As the chicken grills, brush on the sauce several times, until it almost forms a kind of "crust". Be careful not to burn the sauce. That is why it is a good idea to bake or boil the chicken before grilling.
- (Beware of "boiling out" the taste. Baking is better. If you do boil the chicken, do so in chicken broth to conserve the flavour. The cooking liquid can then be saved and used for soup).

A fabulous fruity and quite spicy BBQ sauce - the list of ingredients may seem daunting, but the combination worked extremely well - giving a complex and full bodied taste. The consistancy was superb - not too thin and thick enough to coat the chicken without running off. The weather was not kind, so an outside BBQ was not on the agenda - therefore, I cooked a couple of chicken breasts on the gas stove in a cast iron griddle pan, to great effect! I made a few small changes; I had no whole grain mustard, so I used fine Dijon mustard. I also used a relish, albeit a fruity relish, instead of the chutney. A fabulous BBQ sauce and incidently, a GREAT colour as well! Made for Photo Tag - we BOTH loved the tangy and spicy flavour Zuri - thanks! :-) FT
