Banana Raisin and Oatmeal Pancakes

ingredients
- 1 cup old fashioned oats
- 1 cup flour
- 1⁄4 cup light brown sugar, packed (can use more for a sweeter pancake)
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon (can use less)
- 3⁄4 cup sour cream or 3/4 cup plain yogurt
- 3⁄4 cup full-fat milk or 3/4 cup half-and-half cream
- 2 large eggs
- 1 teaspoon vanilla
- 2 ripe bananas, mashed
- 1 cup raisins
- 1⁄4 cup melted butter
directions
- In a medium bowl combine the oats, flour brown sugar, baking powder, baking soda and cinnamon.
- In another bowl whisk together sour cream, milk, eggs and vanilla.
- Whisk dry ingredients into the sour cream mixture JUST until blended.
- Fold in mashed bananas, raisins and 1/4 cup melted butter; mix to combine.
- Drop about 1/3 cup of batter onto hot skillet or griddle that has been brushed with melted butter.
- Cook pancakes until bubbles form on top and bottoms are golden brown (about 2 minutes on each side).
- Delicious!

These didn't turn out as wonderfully as I am used to a Kitten recipe, but it's probably my own fault. I didn't soak the oats, then the batter was wet enough that I didn't add melted butter, especially since I run a stick of cold butter around the skillet between pancakes anyway. These didn't really set up in the pan and were kind of burnt on the outside and still doughy in the middle. The flavor was there, but it was a bit too squishy in the middle for our tastes. My bananas were super ripe too, so might have had something to do with it. We decided it was a bit like eating banana bread dough... I think next time I'll just stick with my regular recipe for pancakes and just add banana and oats to that when I've got the craving. Thanks anyway, Kitten!
