Banana Pancakes

"These pancakes are light, healthy and best of all delicious! Serve with a cup of unsweetened berries instead of syrup and it is a perfect breakfast!!! These are great if you are watching your weight and want a pancake - no sugar or saturated fat."

  • 1 large banana, ripe (or two smaller ones)
  • 1 teaspoon cinnamon
  • 12 cup old-fashioned oatmeal
  • 1 scoop vanilla protein powder (I like EAS whey protein or Myoplex)
  • 8 ounces egg whites

  • You will need a hot skillet, so you may want to warm it up now.
  • Cut the banana into chunks.
  • Place all ingredients into a blender.
  • Blend to mix ingredients (chop the oats and smooth out the banana).
  • Pour batter into skillet forming pancakes.
  • When bubbles appear on the top, give them a flip.
  • Pancakes are done when golden on the bottom.
  • Note: I use a non-stick skillet and do not add any fat or spray to keep the pancakes from sticking. You may have a different experience, so if you need to use something to keep the cakes from sticking to your pan, do it!
