Banana Nut Bread

"No matter how many or how few bananas I buy, there always seem to be 3 or 4 leftovers too ripe to eat. Banana nut bread has become a Pioneer Dad favorite “go to” recipe for these overripe bananas. This has been a favorite for generations in my family. Serve this as a hors-d’oeuvre at parties or a sweet desert after dinner. Neighbors and guests repeatedly give this recipe high praise. Banana nut bread is a great take along gift when going to parties."

  • Mash the bananas, beat the eggs, add melted butter and mix the together in a bowl.
  • Add chopped nuts to the bowl.
  • Sift the dry ingredients into the bowl, stir well with a fork or spatula to combine to form the batter.
  • Place in a buttered loaf pan, 9”x5”.
  • Bake 1 hour at 350˚.

  • Notes.
  • This recipe will rise to fill a 9”x5” loaf pan. Butter the pans lightly and dust with flour. Let the batter rest in the loaf pan for 20 minutes before placing in the oven to allow the baking soda action to begin. For party sized portions, use two smaller loaf pans.
  • Baking banana nut loaf the day before serving will make cutting the loaf into slices easier. Fresh baked bread crumbles easily.
