  • Cream butter and sugar.
  • Add eggs and mix well.
  • Gradually add flour, baking soda and salt.
  • Stir in bananas and pecans.
  • Bake in greased floured bread pan at 350°F for 1 hour.
  • Ice with mixture of powdered sugar, milk and vanilla. Let drip down the sides.

  1. This makes a VERY moist banana loaf. I didn't use all of the 1/4cup milk required for the icing...I just added enough to get a pouring consistancy. Next time I would use only 2 banana's and skip on the icing as I found it made the loaf a little too sweet. Reviewed for Fall 2008 PAC.
