The most moist muffins I've every made! The original recipe called for Mayonnaise but I use Miracle Whip. So quick and EASY!
- Hand mix ingredients.
- Bake at 350 for 25 minutes.
I make a lot of recipes from this site, some I love, some are ok and some will not be made again. THEN there are SOME that just cannot go without making a comment! This is one of those recipes! It is so easy and quick, most have all the ingredients too. These turn out moist, and not overly sweet. They are just the compliment to a great cup of coffee in the morning. I did add 1 teaspoon of vanilla to my first batch. The second, I experimented and add berries, OMG! That was tasty too. I add 1/4 of a cup of the berries, it was just right in my world. Thank you for this recipe, I will be making these gems again and again!
I used fat free miracle whip, and substituted baking powder with baking soda. Perhaps the baking powder was a problem because mine didn't rise too much. Anyway a good recipe, because I prefer miacle whip over mayonnaise. Thank you!
