Baked Bananas With Cream Cheese

This is great with low fat cream cheese as well. It is good over poundcake or shortbread cookies. I haven't made this yet but it sounds great!

  1. Cut the bananas in half and gently brown in butter over moderate heat. Cream together the cream cheese, sugars, rum and cinnamon until smooth.
  2. Layer browned bananas and cream mixture in a greased 8x8 inch baking dish. Pour the havy cream over all and bake at 375 degrees for 15-20 minutes.

When making this I did use a rum extract instead of the real thing, but other than that, the recipe was made as given, & the baked bananas were so delicious! I had just baked a small pie crust that had kind of messed up (or rather I'd messed it up!) so I crumbled it & topped a couple of servings of the baked bananas with that ~ Rustic, but very nice!
