Bacon Wrapped Shrimp With Jalapenos "i Like It Hot!"

"I have been making this recipe for years, for my friends and family. It's always a hit at parties.I have looked on the web for the original recipe but can't find it and I can't find it, so I'm posting my version. enjoy! WARNING I like it HOT!"

  • Preheat oven to 350 degrees F.
  • Wash shrimp and set aside in a bowl, starting an assembly line.
  • Cut bacon in half vertically, place on a plate.
  • Cut and peel onion into wedges and separate, place in a bowl.
  • Wash Jalapenos,slice into thirds, lengthwise, removing seeds.place in a bowl.
  • Start assembly with a shrimp, a slice of Jalapeno, and a slice of onion. Holding all in your hand, wrap bacon around and secure with a wooded toothpick. Repeat with each shrimp.
  • Place on a baking sheet.
  • Sprinkle with seasoning.
  • Place in the oven and roast until bacon is slightly crisp. Roasting time may be adjusted.

  2. I mixed this up with a variety of peppers including hatch, Fresno and ha banner and place whole garlic cloves in the pan, then dropped some BBQ sauce on theM for the last 5 mins. It's a good thing we are a close family because the fights over the scraps in this dish could have caused a world war. Word to the wise...double whatever you think will be enough for you crew.
     
  3. These little buggers are deliciously addicting! I actually had to smack hands away so I could get a photo haha. I quartered my jalapenos because mine were huge, used red onion, and sprinkled them with Tony Chachere's Spicy seasoning. Excellent!

Tweaks

  1. I used the thinnest bacon I could find, and pre-cooked the bacon slightly on a sheet pan at 325 degrees - approx 5 mins. Just until the bacon started to look clear but still flexible. Let cool then wrap the shrimp, etc. Bacon was cooked to perfection and the shrimp was not overdone.

I am originally from Vermont, but we moved to Texas in 2000. There are so many, foods here in the south, that I had never tasted before. Moved back to VT in 2007. Texas is tooo hot. However while I was there I got to sample the worlds best BBQ and so many foods I have never had before. YUM
