Bacon Cheese Muffins

  • Preheat oven to 400 degrees.
  • In a large skillet, cook bacon over medium high heat until crisp. Drain, reserving drippings. If necessary add oil to drippings to measure 1/3 cup. In a small bowl, combine dripping mixture, egg and milk, set aside. Crumble bacon, set aside.
  • In large bowl combine flour, sugar and baking powder. Make well in center. Add egg mixture all at once to flour mixture, stirring just until moistened. Batter should be lumpy. Fod in bacon, cheese. Spoon into greased or paperlined 2 1/2 inch muffin cups. Fillling about 3/4 full.
  • Bake for 15 to 20 minutes or until golden brown.
  • Remove from pan, let cool on wire rack.

  1. I followed the recipe as written but I was the only one that liked these muffins. Mine weren't real flavorful. Maybe I didn't get enough bacon grease from my bacon. I did like the hint of sugar in these. These were easy to make. I got 10 nice size muffins from this. I have a convection oven so I cooked for 20 minutes at 350 degrees (used a conversion chart to come up with this)
     
  2. A perfect way to start our day off. I chose to make these muffins for us on Sunday morning they turned out to be a big hit with my family. Very easy to make and I look forward to making this recipe again. Thanks 4-H Mom for posting this recipe for us all to try.
     
  3. These were AWESOME! YUM! the bacon drippings really set the flavor off in these muffins. I used 6 strips of bacon and did them in the microwave on my bacon rack. I got exactly 1/3c of bacon drippings to use in the batter. I also used self-rising flour which is the what I had on hand and still used the 1Tbs of baking powder. I found that I needed to add just about 1-2Tbs of water while mixing the batter together. Baked them in my larger muffin pan for 25 minutes at 400'. Shared these muffins with one of my friends and she loved them and wanted the recipe. Thanks so much for sharing this delicious muffin recipe. It's going into my favorite zaar recipe cookbook :)

They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
