Awesome Buttermilk Pancakes

"These are the "BEST" from scratch pancakes I have ever made or tasted. If you don't have buttermilk just add 1 tbsp of lemon juice or 1 tsp of baking soda to milk and you have no effect on the outcome. I like to make a pile of these and freeze them for the kids to pull out on those busy mornings getting ready for school. They freeze wonderfully."

• Serves: 12

ingredients

• 1 cup flour
• 1 teaspoon baking powder
• 1⁄2 teaspoon baking soda
• 1⁄2 teaspoon salt
• 2 tablespoons sugar
• 1 egg
• 1 cup buttermilk
• 2 tablespoons vegetable oil

directions

1. Whisk dry ingredients together.
2. Set aside.
3. Mix wet ingredients.
4. Add wet to dry.
5. Mix well with whisk.
6. You may need more milk for thinner cakes.

Just bought an electric griddle and wanted to make pancakes. There are a lot of pancake recipes on Zaar, but I'm glad I went with this one. I've never made pancakes from scratch before & this was a good one to start with. I altered the recipe a bit by using 1/4 c. oatmeal, 1/4 c. a-p flour & 1/2 c. whole wheat. Next time I'll use only wheat flour. I believe they will still be light.

My friend made this recipe for us a few days ago and I loved them!! I was going to post it on Zarr but saw that someone else already did! We usually use Bisquick for pancakes but I may be done doing that after finding this recipe:)

I second the previous review. There was nothing left. Very light, very easy to put together, very easy to eat. TOO easy to eat! We'll definitely be having this one again. Thanks for posting such an easy and delicious made-from-scratch pancake recipe!

OH MY! I've never tasted a better pancake! They were light and fluffy. We ate every one of them! I fixed them for supper with orange-honey butter and sausage patties.
