ingredients
- 1⁄2 head red cabbage (thinly sliced)
- 1 carrot, julienned
- 2 tablespoons coconut oil
- 2 tablespoons fresh squeezed lemon juice
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 1⁄2 teaspoon salt
- 1⁄4 cup cilantro, minced
- 1⁄4 cup cranberries
- 1⁄4 cup roasted shelled, sunflower seeds
directions
- Combine sliced cabbage, julienned carrots and cranberries in large mixing bowl.
- In a small mixing bowl, whisk together remaining ingredients to make the dressing.
- Pour dressing over salad mixture and stir.
- Add toasted sunflower seeds immediately before serving.
