Asian-Apricot Chicken Cutlets

- 4 boneless chicken breasts
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon onion powder
- 1⁄4 teaspoon garlic powder
- 1⁄8 teaspoon ground ginger
- 1 large white onion
- 2 tablespoons cooking oil
- 3 garlic cloves (minced finely)
- 3⁄4 cup apricot nectar
- 2⁄3 cup apricot preserves
- 2 tablespoons oyster sauce
- 2 tablespoons light soy sauce
directions
- Butterfly out the chicken breasts to as even a thickness as is possible.
- Chop onion.
- Mix together the 1/4 tsp of salt, pepper, onion powder, garlic powder and the ginger.
- Season chicken breasts with the spice mixture.
- Heat a large skillet over medium-low heat, and add the 2 TBS of oil.
- Brown the onion,and the chicken breasts for approximately 5 minute per side.
- Mix together all the remaining ingredients in a bowl.
- When chicken breasts are browned on both sides, add the sauce mixture.
- Simmer on medium-low heat for approximately 15-20 minutes, until chicken is done to an internal temperature of 170 degrees, and sauce is reduced and thickened.
- Taste sauce (say Yum) and add more pepper or soy sauce to taste, if desired.
- Serve over steamed white rice.

I served this very, very nice tasting chicken dish over brown rice, but other than that I followed the recipe right down the line! I'd never used oyster sauce before [oysters are on my very negative list!], but I included it as well! Another time I'll be tempted to include either a little more of the apricot preserves OR add some chopped dried apricots, but that's another time! I was very happy with the results of this recipe, as were my guests, & I even passed the recipe along to them!! Thanks so much for this addition!

Recently moved to New Mexico from South-East Texas. What can I say, I LOVE to cook! My screen name came from my husband Bert. He calls me his Kitchen Witch, because he says that I "make magic" in the kitchen.Bert works in Emergency Medicine in a local E.R.(That's what brought us here to New Mexico.) I have 5 awesome children, 2 step-sons, 2 sons, and a daughter, who because she is the youngest and the only girl, thinks she is a princess.(oh no, she's not spoiled!) I come from a long line of people, on both sides of the family, who were wonderful and creative cooks. I guess that explains my love of cooking and feeding people.I truly get a thrill out of serving food to people who enjoy it.I also love to read, and consume books and information ravenously.I absolutely adore a great mystery.I also would have a hard time surviving without music! I like most all music, from The Beatles, to old Blues(Robert Johnson rocks!) ,to Loreena McKennitt,and Phoebe Snow.I am currently a house wife, due to our recent move.Before that, I worked for several years with abused children in an RTC.(Residential Treatment Center.) My pet peeves are small-minded,prejudiced,mean people and wastefulness.
