- 29.58 ml vegetable oil
- 14.79 ml unsalted butter
- 1 large cinnamon stick
- 2 whole cloves
- 177.44 ml minced onion
- 2.46 ml ground cardamom
- 473.18 ml uncooked basmati rice, washed
- 236.59 ml water
- 473.18 ml chicken broth
- 59.14 ml raisins or 59.14 ml chopped dates
- 2.46-4.92 ml salt
- 14.79 ml orange zest or 14.79 ml lemon, rind of
- 59.14 ml unsalted pistachios, toasted

- Heat oil and butter in a 3 quart pan over high heat.
- Add cinnamon and cloves, stirring until cinnamon puffs up,1-2 minutes.
- Reduce heat, add onion, cardamom, saute until onion is clear, about 3 minutes.
- Stir in rice, mix to coat all grains with other ingredients.
- Cook until it starts to be aromatic, 1-2 minutes.
