Apple-Pecan Bran Muffins

  • Preheat oven to 400ºF and grease or line a 12-cup muffin tin.
  • In a large bowl, beat together the eggs, oil, buttermilk/yogurt, molasses, and honey.
  • Stir in the wheat bran.
  • In medium bowl, mix together the pastry flour, oats, baking powder, baking soda, cinnamon, ginger, and nutmeg.
  • Stir the flour mixture into the bran mixture, being careful not to overmix.
  • Fold in the apple and pecans.
  • Spoon the batter into muffin tin and bake 20 to 25 minutes, or until toothpick inserted into the center of a muffin comes out clean.

  1. Super super good!!! I used all honey in place of molasses and added applesauce as well as the oil, and replaced 1/3 of the bran w/ground flaxseed meal. I also added a pecan-lemonzest-crumb topping for extra yum. I wrote the recipe down; will be making these again!
     
  2. These were SO good! I was also worried that they might turn out dry when I first took them out of the oven but they were moist. I used wheat bran, used all honey (replacing the molasses), applesauce for the oil, buttermilk& added 1/3 cup Splenda. I left out the pecans so I added another 1/2 cup chopped apple. I also ground up my oats. loved the healthy ingredients-thank you!
     
  3. I followed this recipe exactly, using wheat bran and organic fat free vanilla yogurt. These have great texture and good flavor but are a bit dry. Next time I think I'll use oat bran (because I find that to be less "thick" tasting then wheat bran). I found that adding a little homemade jelly (I have some wonderful strawberry/cranberry made by the ladies of my church) made them divine!
