A sweet treat - delicious with fresh fruit in season
- 20 Ritz crackers or 20 jatz crackers
- 1 cup caster sugar
- 1 teaspoon vanilla
- 1 cup sliced almonds
- 3 egg whites
- Preheat oven to 180c. Grease pie dish.
- Beat egg whites until stiff. Add sugar and vanilla, beat again for 30 seconds.
- Fold in crushed biscuits & nuts.
- Pour into pie dish and bake for 20 - 30 minutes.
- Decorate with whipped cream, fruit or more nuts.
