Crust
- 236.59 ml butter or 236.59 ml margarine
- 236.59 ml brown sugar
- 1 large egg
- 630.98 ml flour
- 4.92 ml baking powder
- 4.92 ml salt

Filling
- 78.78 ml unsalted butter, melted and cooled
- 295.73 ml brown sugar, packed
- 236.59 ml corn syrup
- 4 eggs, lightly beaten
- 7.39 ml pure vanilla extract
- 118.29 ml light cream or 118.29 ml heavy cream
- 354.88-473.18 ml chopped pecans
directions
- To make crust, mix butter, brown sugar, egg, flour, baking powder, and salt until crumbly.
- Press into a large 10x15 baking dish.
- Bake at 350° for 20 minutes.
- To make filling, wait until the crust is almost done.
- Blend the melted butter, brown sugar, corn syrup, eggs, and cream.
- Add the vanilla. Stir in pecans.
- Pour over crust.
- Bake at 350º for about thirty minutes until the filling begins to set.
- Cool slightly in pan and cut in squares.

Absolutely delicious, PaNik. I did as AmandaLynn suggested. It tasted like pecan pie but supersized with the crust. So glad your mom erred! We live in pecan country, so pecans are readily available. In fact, one of the farmers send me 10 pounds he had in the freezer! I'm in pecan heaven, and this recipe will definitely be made again. Thnx for posting your recipe. Made for PAC Spring 2010.
