Easy Baked Summer Yellow Squash

- 3 lbs yellow squash, peeled
- 1⁄4 cup melted butter
- 1 small onion, finely chopped
- 2 eggs, lightly beaten
- 1 tablespoon sugar
- 3 tablespoons grated parmesan cheese (can use more)
- 2 teaspoons seasoning salt (or to taste, or use white salt)
- black pepper

TOPPING
- 1 1⁄2 cups fresh breadcrumbs
- 2 -3 tablespoons parmesan cheese
- 1⁄4 cup melted butter
directions
- Chop the squash into about 1-1/2-inch cubes.
- Bake, steam or boil until tender; drain the squash very well if boiling then place into a bowl and mash.
- Set oven to 375 degrees.
- Butter a 2-quart casserole dish.
- To the mashed squash add in 1/4 cup melted butter, onions, eggs, sugar, seasoned salt and black pepper to taste; mix to combine.
- Transfer the mixture to prepared baking dish.
- In a small bowl mix together the bread crumbs with Parmesan cheese and 1/4 cup melted butter until blended; sprinkle over the squash.
- Bake for about 45 minutes.

Another great recipe from Kittencal. I really loved this dish. I peeled the squash and added a zucchini too. Steamed the veggies, then mashed and added the rest. I used a whole onion and added some hot garlic (combination of cayenne and garlic) which added some wonderful flavor. I did cut down on the bread crumbs and butter in the topping, but added more cheese. Had it along side of a nice steak cooked on the grill and salad. Family loved the meal! Will definitely make this again.

I really enjoyed this dish. I did not peel my squash or zucchini when I added it, but instead used by blender after it was cooked to get it well mashed. I had to substitute olive oil for the butter since my DD is allergic to dairy (and gave her a separate dish with no cheese since I wanted to have cheese on ours). The EVOO worked out fine. It was very good!
