  • 6 medium summer squash, sliced
  • 14 cup butter
  • 1 medium onion, sliced thinly or diced
  • salt & pepper

directions

  • Melt butter in large skillet.
  • Add onion and cook just till tender.
  • Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften.
  • Cover and continue cooking over low heat until nice and tender (usually about 20-25 minutes).
  • I add lots of salt and pepper.

  1. Bev, this was delicious! We loved the buttery taste the squash gets. It gets cooked, but not too soft. This is a simple basic recipe with a minimum of ingredients, yet it could be on the most elegant table! We used the salt and pepper and also a sprinkling of paprika for color. Thanks for a recipe I will use often!

  5. My mother-in-law taught me how to cook squash like this years ago. It is quite delicious! The only thing she did different was add a little sugar to help bring out the natural sweetness. The kids will eat this up.

  1. I did my take and added crushed garlic and diced red peppers for a bit of color and added flavor.

  3. I tried this recipe & it turned out delicious! I thought it would be hard to make but it was so easy & so fast. I made it in 30 minutes.
     
  4. If you're looking for something a little different and you enjoy spicy - I highly recommend using a little cajun seasoning OR if you reeally like spicy, grab some Jalapeño Salt from the store. Or if you're trying to use less salt I've also tried using Sriracha Black Pepper.. looove. They sell it at Walmart. I reeally love spicy squash/zucchini!
     
  5. Wonderful! I used olive oil instead of butter. I also found that it only took about 10 minutes to cook (in a heavy cast iron pan), not the 20-25 the instructions say.
