- 3 lbs stewing beef, cut into cubes
- 2 medium onions, minced
- 2 tablespoons vegetable oil
- 1 (16 ounce) can pinto beans
- 1 (10 ounce) can tomatoes
- 1 cup water
- 2 (4 ounce) cans green chilies
- 3 tablespoons beef bouillon granules
- 1 tablespoon sugar
- 1 clove garlic
- 1⁄2 cup shredded white cheddar cheese or 1/2 cup monterey jack cheese
- 6 -8 flour tortillas
directions
- Brown beef and onions in oil in large saucepan.
- Add beans, tomatoes, water, chilies, beef granules, sugar and garlic, bring to a boil.
- Reduce heat and simmer, uncovered, for 1 hour or until meat is tender.
- Ladle into individual bowls and sprinkle with cheese.
- Serve with warmed tortillas.
