"This dressing couldn't be easier to prepare and is wonderful on a simple tossed salad. It's also nice as a dip for artichokes."

ingredients

• 2 cups canola oil
• 1⁄3 cup fresh lemon juice
• 4 cloves garlic
• 3⁄4 cup feta cheese
• salt and pepper

directions

1. Combine all ingredients in a blender.
2. Blend until smooth.
3. Refrigerate until ready to use.
