  • MELT BUTTER WITH OLIVE OIL IN LARGE HEAVY SKILLET OVER MEDIUM HEAT.
  • ADD GARLIC AND SAUTE ABOUT 1 MIN.
  • QUICKLY BLEND IN FLOUR WITH WIRE WHISK.
  • GRADUALLY STIR IN REMAINING INGREDIENTS.
  • COOK OVER MEDIUM LOW HEAT, STIRRING CONSTANTLY UNTIL SAUCE IS SLIGHTLY THICKENED.
  • PLACE COOKED PASTA IN INDIVIDUAL SERVING DISHES.
  • SPOON CLAM SAUCE OVER PASTA.
  • SERVE.
  • PASS GRATED PARMESAN CHEESE.

  1. I also liked how this sauce sticks to the pasta-- no more puddles of sauce left on our plates after the pasta is gone!! Very tasty.
     
  2. At last, a clam sauce that sticks to the pasta! I've been striving for years to make this. I think I will increase the flour to 2 tbs. for a little thicker sauce.
     
  3. I made a bunch of changes, but the basic flavors were there and this was absolutely delicious. I only used 2 T of olive oil, added two shallots, added an extra can of clams, used the juice from the canned clams, and left out the marjoram. Even with all of these changes, the sauce turned out wonderful and flavorful and it coated the pasta really well. Wonderful recipe.
     
  4. This is the best clam sauce I ever tasted . My family absolutely loves this. I make this at least once a month. The only thing I did differently was use fresh oregano from my garden and ommited marjoram.
     
  5. I really liked this recipe. It was a very easy recipe, perfect for a lovely weeknight meal. My kids who are the BIG clam fans really enjoyed this. Thanks for a good meal!

Update: My mother, BoxO'Wine passed away on April 23, 2009 after a 2 year battle with pancreatic cancer. She was a wonderful cook and is greatly missed. I am the DD that she has mentioned here quite frequently and have decided to continue her account. I also use RecipeZaar quite frequently as I learned about it from her. I strive to make her recipes; however, they will never be the same. I am also leaving all her own biographical information in here that she had. Genuine Jersey Girl here. Lived here all my life with the exception of a short stint in the Bay Area/San Francisco. Married to the same guy for over 40 years. We have 3 children and 5 grandchildren. My son lives in Georgia (he talks funny) and my two daughters live near me in New Jersey. I am a retired politician, but I still have a real job. Looking forward to full retirement in about 2 yrs or so and if my children don't force me into the "home" I will be spending my social security checks in Atlantic City casinos. I have chemically enhanced blonde hair which is currently spiked to match my weird sense of humor and beverage du jour. Obviously I am a wino. White please, preferably chardonnay.
