Louisiana Red Beans and Rice

  • Cook beans according to basic directions.
  • Heat peanut oil in a large saucepan and saute onions, garlic, green peppers, and celery.
  • Add the bay leaves, thyme, cumin, paprika, tomatoes, vinegar, and some bean broth.
  • Simmer vegetables until they are tender.
  • Shortly before serving, add the beans with the remaining broth, hot pepper sauce, and salt.
  • Bring to a boil, lower heat, and simmer about 5 minutes.
  • Serve over steaming rice.

  1. We love red beans and rice and this was a nice treat. I made only a few changes -- used 1 onion and 1 bell pepper and I added some smoked sausage to the beans at the end. Served over rice with a salad and dinner was complete and yummy.
