Swedish Onions and Potatoes Au Gratin

- Saute onions in the butter, on medium heat. until limp, but not brown.
- In a medium baking dish, alternate layers of potatoes, onions and cheese, making sure that the cheese is at the top and final layer.
- Add the milk, salt and pepper. Cover with chopped parsley and sprinkle with paprika. Bake uncovered at 325 F for 30 minutes, or until heated through.
- Serve warm.

These easy to make potatoes are delicious Studentchef. We enjoyed them very much. The flavor from the cheese, sweet onions and yukon gold potates was perfect. The tender texture was lovely, resulting in melt in your mouth potatoes. I can't wait to make these again. I made 1/2 a recipe, which was perfect for the two of us. Thanks for sharing your recipe. Yum! I used 2 humungous potatoes for these. I didn't boil them long enough because I was afraid that they would fall apart when it was time to slice them. I had to bake mine a little longer than directed - not the recipes fault. The flavor was wonderful and the whole family enjoyed them. Loved the onions and cheese (Mexi-cheese blend) in these. I am an Israeli-Canadian who grew up in Montreal Quebec. I love to cook, especially for family and friends, and I love to experiment with recipes and try to do different variations of the same recipe. I did do part of cooking school, but found the place stressful and all the good recipes high in fat and calories, even the good ones. I don't have a fave cookbook, but I eat kosher. I have a dream and that is to own my own B&B one of these days. I also love creative writing, and maybe I like to try make up a recipe of my own and see if I'm good at doing that.
I have to add that I do have some favourite chefs from the Food Network. They are Giada De Laurentis from Everyday Italian; Micheal Smith from Chef at Home; Jamie Oliver and everything he does; Anna Olson from Sugar; and Chef Gordon Ramsey from Hells' Kitchen and Ramsey's Kitchen Nightmares.
