- 1 1⁄2 cups water
- 1 cup long-grain rice, uncooked
- 1⁄2 cup onion, chopped
- 1⁄2 cup shredded mozzarella cheese
- 1 1⁄2 teaspoons dried Italian seasoning
- 1⁄2 teaspoon ms. dash salt-free garlic and herbs
- 1⁄4 teaspoon pepper
- 14 teaspoons salt
- 1 (14 1/2 ounce) can diced tomatoes
- Pam cooking spray
- 1⁄2 teaspoon garlic powder
- 1⁄2 cup grated parmesan cheese
- 1 1⁄2 teaspoons dried Italian seasoning
directions
- Combine first 9 ingredients in a 2-quart casserole coated with Pam and stir well.
- Arrange chicken breast halves over rice mixture and sprinkle with garlic powder. Sprinkle with Parmesan cheese and 1 1/2 teaspoons Italian seasoning. Cover and bake at 350 degrees for 45 minutes. Uncover and bake an additional 15 minutes or until liquid is absorbed.
