Cranberry Apricot Truffles

  • Place apricots, cranberries and orange zest in food processor. Pulse until fruit is chpped and forms a large ball. Form fruit mixture into 1 inch balls and place on a parchment lined baking sheet. In a saucepan over very low heat, melt chocolate. Drizzle one heaping teaspoon of melted chocolate over each fruit ball. Allow chocolate to harden, refrigerating if necessary.

  1. Lovely truffles! I halved the recipe and used a single-origin 70% Guatemalan chocolate. Used a double boiler to melt the chocolate and found it easier to just drop the balls in the chocolate and toss to cover then remove with a fork to the parchment paper. I used about 3 oz chocolate and had some leftover. After chilling in the fridge, they were perfect. Thanks for sharing!
     
  2. Oh, yes ~ Using 4 ingredients that I do so love, these truffles were a delight to make, & so easily done, too! I'd thought about sharing them with a small group, but ended up keeping them all right here at home! Definitely something I've put on the schedule to make again several times before the beginning of the new year! Thanks so much for sharing a great keeper of a recipe! These are really nice!<br/>I followed the recipe as written, only adding a few unsalted peanuts that I had leftover and these were lovely.<br/>I did cover completely in dark chocolate (coz.....I loooooove dark chocolate).<br/>I did think when putting in the procesor the mix would never form a ball............ But it did and these were a breeze to make.<br/>First time this family has ever tried dried cranberries and we loved them.<br/>Thanks Nancy a lovely and different recipe to make, (now we know we like dried cranberries!)
