directions

  • Brown hamburger and drain.
  • Put into 1 1/4 quart.
  • casserole dish and add tomato sauce, beans, enchilada sauce, and onion and 1 1/2 cups cheese and corn chips.
  • Bake at 350 for 30 minutes.
  • Remove from oven and sprinkle whole corn chips around edge of casserole and put 1 sour cream in center.
  • Bake for 2-3 minutes longer.
  • Sprinkle remaining cheese on top of sour cream and serve.

  1. The flavors were great. This dish was almost too easy to prepare! I used pinto beans with jalapeño which added a little more spice. We enjoyed this dish very much. It will definately be made again. Thanks for sharing.

This is from Better Homes and Garden's Casserole Recipes cookbook; my grandma gave it to me years ago and it's the only recipe in it that I've ever made more than once (I've made it dozens of times). I use hot chili beans instead of the pinto beans, and use much more cheese and Fritos than written. For my family (DH and two boys) I always double it and it generally gives us one hearty dinner and a snack for my kids.
     
  5. This was absolutely delicious. Quick & easy, and both me & my husband loved it. I replaced the pintos with black beans, and the Fritos with tortilla chips. Yum!

  2. Yummy! I used fresh onion instead of dried minced onion and browned it with the meat. It looks very pretty with the corn chips around the edges and the sour cream and cheese in the middle. I sprinkled chopped green onions on top for some extra color. Great kid-pleaser! Thanx for sharing!

I asked for recommendations at 'recipe requests' for what to do w/ground beef that needed to be used, Neta recommended this recipe(you Zaarians are great)This really hit the spot. I used black beans instead of pinto and topped w/taco sauce. We enjoyed ours by serving w/additional corn chips to dip into the chili bake. Thanks Miss Diggy-hope you are spoiling your new baby right to pieces!
