  • In a food processor mix oat bran & flax seed into a coarse flour.
  • Mix dry ingredients & wet ingredients separately, then combine.
  • Then I added
  • 2-3 mashed bananas.
  • 1 cup chopped carrots in food processor.
  • 4 scoops of vanilla protein powder
  • 1 cup of Blueberries, raisins, craisins, dates, or prunes.
  • Pour into 24 muffin tins. Bake at 425 for 14-15 minutes.

  1. THese muffins are quite healthy. Would add a little more brown sugar if I make them again. Made them for the freezer after my son was born for quick snack/breakfast. Thanks for posting!
     
  2. Nice muffins. Not too sweet but very healthy. I made these because my cholesterol is on the high side and I was told that oat bran was very effective in lowering cholesterol. I hope it works.
