ingredients
- 2 1⁄4 cups flour
- 2 cups oat bran, not oatmeal
- 1 3⁄4 cups sugar
- 4 tablespoons baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1 cup 2% low-fat milk
- 4 eggs
- 1⁄2 cup olive oil, the kind for baking
- 1⁄2 cup applesauce
- 2 cups blueberries
directions
- Mix dry ingredients, then in seperate bowl mix the wet ingredients . add wet to the dry. blend in 2 cups of fresh or frozen thrawed blueberries. If using liners for the muffins try to get the foil ones they don't stick when you try to get the muffin out. Bake 20 minutes at 400. makes 12 large or 18 smaller ones -- .

These muffins are so delicious. I made 24 large muffins. I was concerned about the amount of Baking Powder as 4 tablespoons is a huge amount. I used 4 raised teaspoons and the recipe certainly does not require any more than that. I used the blueberries straight from the freezer. They cooked perfectly in the 20 minutes.

YUM! this recipe made 36 regular sized muffins (when filling the cups 1/2 to 3/4 full). i covered my blueberries with flour and mixed in while they were still frozen and they came out perfectly. on the first batch i rotated after 10 mins of baking and the middles of some of the muffins caved in. on the second batch i rotated after 15 mins and i didn't have that problem. i really like the nutty flavor that the olive oil gives to this muffin. it tastes both yummy and healthy.
